This wine from the family's Treiso plots led a strong set of releases from Sottimano in the 2019 vintage, when cool nights near harvesttime led to nebbiolo with thick skins and plenty of power and richness. Pajoré is explosive on the palate, its tangy cherry flavors layered with notes of licorice and tobacco leaf. Bright, chalky acidity drives the flavors as the wine takes on notes of loamy earth and warm spices on the way to a long and harmonious finish. Score - 96. (wineandspiritsmagazine.com, Dec. 2022)
