Passerina is an ancient grape variety indigenous to the Adriatic Coast. It's well-known for its high yields, which is why it's endearingly called 'scacciadebito' (chasing the debts). This mineral-driven, saline wine offers notes of lemon peel and seashell that would pair wonderfully with clam linguine.
