This blend of Syrah, Grenache and Mourvèdre is sourced from schist soils and aged in stainless steel. The Saint-Chinian appellation has two soil types: clay-limestone in the south and schist in the north. Schist encourages rich minerality and acidity in the wines and high tannins when young. This intense, highly aromatic wine shows black fruit, cherry, and forest floor. Pair it with veggie stew or lasagna.
